Baymax vanilla cookies – another yummy snack to add to the ‘Nat + Izzy’ section!

I wanted to do something with Nat just before I flew off and I remembered the Baymax toy that I had gotten him for Christmas. And thanks to youtuber Koalipops, making baymax cookies was a whole lot easier! Koalipops is super adorable and you should definitely watch his video here.

The recipe I found for the vanilla cookies was very simple and tasted really good! It can be found here.

  • 70g icing sugar, sieved
  • 1/2 tsp vanilla extract
  • 1 small egg yolk
  • 125g butter, cut into small cubes
  • 190g plain flour, sieved
  • Chocolate chips

  1. Print out your desired baymax pictures and cut them out
  2. Put the icing sugar, vanilla extract, egg yolk and butter into a mixing bowl, then stir together with a wooden spoon
  3. Add the flour and mix to a firm dough.
  4. Shape the dough into two flat discs and wrap in clingfilm. Chill for 20-30 mins.
  5. Heat oven to 190C/fan 170C/gas 5 and line two baking sheets with non-stick baking paper.
  6. Roll out the dough on a lightly floured surface
  7. Place your baymax picture on top of it and carefully cut out the shape
  8. Bake for 12-15 minutes
  9. When cooled, put the melted chocolate chips into a piping bag and cut off a tiny little piece at the end.
  10. Follow the picture and outline the picture likewise
  11. Put the white and red cookie icing at the desired places

And this picture above was supposed to be Baymax in his armour… but Nat’s superb skills made it look rather different.
