Apple And Elderflower Cupcakes

If you’re tired of chopping up the apples, why not try adding apple juice instead? 😛

INGREDIENTS (makes 6-9)

For the cupcakes:

  •  3/4 self-raising flour
  • 1/4tsp baking powder
  • 1 eggs
  • 1 /2 sugar
  • 1/2 cup of apple juice
  • 1/4 vegetable oil
  • 1/4 tsp vanilla extract
  • 1 tsp cinnamon

For the frosting:

  • 125g softened butter
  • 300g powdered sugar
  • 1/4 tsp elderflower extract

METHOD

  1. Whisk the oil and sugar together, then add in the egg, apple juice, vanilla extract
  2. Add the wet ingredients into the dry ingredients
  3. Mix until smooth and scoop into cupcake cases
  4. Bake at gas mark 4 for 16 minutes
