Lavender Cookies | Vanilla Chai Cookies

I call these late-night procastination cookies! 😛

  • 70g icing sugar, sieved
  • 1/2 tsp vanilla extract
  • 1 small egg yolk
  • 125g butter, cut into small cubes
  • 190g plain flour, sieved
  • Dried lavender
  • 1 Twinings spicy chai teabag


  1. Heat oven to 190C/fan 170C/gas 5
  2. Put the icing sugar, vanilla extract, egg yolk and butter into a mixing bowl, then stir together with a wooden spoon
  3. Add the flour and mix to a firm dough.
  4. Split dough into two, and the lavender and contents of the chai teabag into each one
  5. Kneed each dough ball thoroughly
  6. Roll out the dough on a lightly floured surface and cut out desired shapes
  7. Bake for 12-15 minutes
  8. For the lavender cookies, I melted 20g of white chocolate and mixed in some purple food colouring. I then piped the melted chocolate onto the lavender cookies
