Keylime Pie Cupcakes

I think I’m currently really into mixing up different desserts together, but here’s another one of my baking mashups – keylime pie cupcakes!

Lime, lemon curd, and a soft crumble base – what’s there not to love?

I was really craving some keylime pie, but I really wanted a lighter version, so I decided on transforming them into cupcakes!

(Makes 18-24 cupcakes)

For the crumble base:

Ingredients (inspired by Cupcake Jemma and Hummingbird bakery):

  • 150g digestive biscuits
  • 50g melted butter
  • 1 tbsp golden syrup

For the lime cupcakes:

  • Lemon curd
  • 70g unsalted butter (softened)
  • 250g caster sugar
  • 210g plain flour
  • 1 tbsp baking powder
  • 210ml milk
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 lime

 

Method:

  1. Preheat your oven to 180C/ Gas mark 4
  2. Crush the digestive biscuits (in a blender or by hand with a rolling pin) until the biscuits become fine crumbs
  3. Add the melted butter and golden syrup into the ground biscuits and mix well
  4. Spoon about 1 tbsp to 1.5 tbsp of this biscuit mix into each cupcake case, depending on how thick you want your crumble base to be, and then gently flatten this base with the your knuckles. This is to prevent any of the batter from seeping into any gaps in the crumble base
  5. For the cupcake batter, start by whisking your butter and sugar until pale and fluffy
  6. In another bowl, whisk together your milk, eggs and vanilla extract
  7. Add in half of your dryΒ mixture (flour and baking powder)Β into the butter mixture and mix well
  8. Add in your wet ingredients and mix well, followed then by the other half of your dry ingredients
  9. Zest the lime and gently fold this into the mixture
  10. Whisk for another 20 seconds until smooth and combined
  11. Fill the cupcake cases until 3/4 full
  12. Bake for 15-20 minutes
  13. When these cupcakes are out of the oven and cooled, core the middle of the cupcakes and add in a tsp of your lemon curd
  14. Finish up by piping some freshly whipped cream onto the cupcakes!
