Chocolate PB butterscotch muffins

Three things I wanted to eat: chocolate, peanut butter and butterscotch.

(Makes 12 muffins)

Recipe inspired by Call Me Cupcake.

Ingredients:

  • 300 g all purpose flour
  • 80 g cocoa powder
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 250 g sugar
  • 100 g butter, melted
  • 1/4 tsp vanilla extract
  • 250 ml milk
  • 2 large eggs
  • butterscotch chips
  • peanut butter

Method:

  1. Preheat oven to 200C/ Gas mark 6
  2. Whisk the melted butter and sugar until combined
  3. In a bowl, whisk the milk, eggs and vanilla extract
  4. In another bowl, whisk the flour, cocoa powder, baking powder, baking soda and salt together
  5. Add the wet and dry ingredients into the butter-sugar mixture in two parts each, each time alternating between the wet and dry ingredients
  6. Mix in the butterscotch chips (leaving some to place on the top of the muffins just before they go into the oven)
  7. Using a tablespoon, spoon the batter until the muffin cases are 1/3 full
  8. Then scoop in a teaspoon of peanut butter into the centre of the batter, before covering it with more batter until the muffin cases are 2/3 full
  9. Bake muffins for 20-25 minutes
