3 Simple Exam Bakes!

Exam season has come upon us!!! And yes, we all need that sugar rush to get through those all-nighters, tears and insane hours of procrastination by watching all the Game of Thrones seasons again (Wait, I don’t do that … Of course not…)

Well, let me come to rescue with these three simple desserts that you can do in less than half an hour!

1. Microwave mug brownie

Total time: 15 minutes at the most

INGREDIENTS

  • 2.5 tablespoons of vegetable oil
  • 2 tablespoons water
  • 1/4 teaspoon vanilla extract
  • 1 dash salt
  • 4 tablespoons granulated sugar
  • 2 tablespoons unsweetened cocoa powder
  • 4 tablespoons all-purpose flour

METHOD

  • Mix the oil, water and vanilla extract
  • Add in the remaining ingredients
  • Stir until evenly mixed
  • Put in microwave for 3-4 minutes

 

2. Chocolate avocado mousse

Because you want to feel ‘healthy’ while you spend all those hours on your butt staring at the computer screen…

Total time: 30 minutes at the most

Makes 1 serving

Ingredients

  • 50g cooking chocolate
  • 2 tbsp maple syrup
  • 1 tsp coffee extract
  • 3 tbsp full cream milk
  • 2 tbsp cocoa powder
  • 1 ripe avocado

Method

  1. Microwave the chocolate or melt the chocolate over a double boil
  2. While the chocolate is melting, mash the avocado up until smooth. You can use a food blender, but you can also just use a fork
  3. When the chocolate has melted, add in the coffee extract, milk, maple syrup and cocoa powder and mix until smooth
  4. Add the chocolate mixture into the mashed avocado and mix until smooth
  5. Leave to set for 8 hours/overnight

 

3. Banana Nutella no-bake cheesecake

Total time: 30 minutes at the most/ overnight

Ingredients:

  • 150g crushed oreos
  • 50g melted butter
  • 1.5 tbsp golden syrup
  • 200g cream cheese (full fat)
  • 300ml double cream
  • 1 tsp vanilla
  • 100g nutella
  • 60g caster sugar
  • 1 banana, sliced thinly

Method:

  1. To make the oreo base, mix the crushed oreos, melted butter and golden syrup in a bowl. Place this in the cake tin and press down evenly until it covers the whole base of the tin
  2. Then, place the banana slices over the base
  3. Place this in the fridge to set
  4. While the cheesecake base is setting, whisk the cream cheese, vanilla extract and caster sugar with an electric mixer until it becomes a smooth creamy mixture.
  5. Add in the double cream and whisk until it forms stiff peaks
  6. Add in the nutella and whisk until combined
  7. Place nutella cheesecake mixture into the cake tin, making sure that there are no spaces. Set overnight.
  8. Alternatively, if you want to dig into it straight away, you can place the oreo mixture into a cup (pressing it firmly down) and then add the cheesecake on top!
